The oenologist Miguel Besoain selects the sites, accompanies the maturation process in the vineyard and the hand-picking of the grapes. These are wines of the highest quality and the purest expression of the grape variety and terroir of that vintage.

Beschreibung

Our vineyards are located on a terrace above the Maipo River. The semi-arid Mediterranean climate with an average annual rainfall of 350 mm ensures stable and optimal weather conditions with a high level of sunshine during the ripening period and cool night airs coming down from the Andes. As a result, there are strong temperature fluctuations of 28°C during the day and 10-12°C at night.

This is the perfect environment for powerful and elegant wines made from Cabernet Sauvignon, a fruity varietal that tastes of black currant, cassis and other red berries, but also reveals notes of paprika, tobacco and chocolate. This Cabernet even smells a bit like peach. The storage in small oak barrels and later in the bottle make the wine stronger and, above all, more harmonious.

Nose: Dry figs, blackcurrants, peaches
Palate: Rich and ripe fruit, notes of cassis and vanilla, well-integrated tannins

Winemaking

Age of the vines: 27 years. The vines grow on a terrace above the banks of the Maipo River, 100% hand-picked (a hand-picking of the grapes in the vineyard and then in the cellar)
Pre-fermentative cold maceration: 5 days. Alcoholic fermentation in small stainless steel tanks. Malolactic fermentation in French barriques for 12-16 months. The barriques are second occupancy to make the wine fruitier and livelier.
